Quick and Delicious Chorizo & Mozzarella Gnocchi bake

How to bake Chorizo & Mozzarella Gnocchi

Method -1

Ingredients

500g fresh gnocchi
100g chorizo, roughly chopped
1 garlic clove, crushed
400g can chopped tomatoes
200g baby spinach, washed and drained
125g mozzarella


 Steps to Prepare :

1.  Cook the gnocchi in boiling salted water for 2 minutes less than package directions, then drain and add to a large ovenproof dish.

2.  Preheat oven to 200 ° C / 180 ° C fan / gas 6. Add chorizo to dry skillet over medium heat. Cook, stirring, for 4 minutes, until the chorizo is sizzling and browning at the edges.

3. Add garlic clove, chopped tomatoes, and baby spinach. Heat to wilt the spinach, season to taste and pour over the gnocchi on the ovenproof dish.

4. Spread with the mozzarella, cut into pieces, and bake for 10-15 minutes, until bubbly and golden brown.


Method -2

Ingredients

1 tbsp olive oil
1 onion , finely chopped
2 garlic cloves, crushed
120g chorizo , diced
2 x 400g cans chopped tomatoes
1 tsp caster sugar
600g fresh gnocchi
125g mozzarella ball, cut into chunks
small bunch of basil , torn green salad, to serve


Steps to Prepare :

1. Heat the oil in a medium skillet over medium heat. Fry the onion and garlic for 8-10 minutes until soft. Add the chorizo and fry for 5 more minutes. Add the tomatoes and sugar and season. Bring to a simmer, then add the gnocchi and cook for 8 minutes, stirring frequently, until smooth. Heat the grill over high heat.

2. Stir ¾ of the mozzarella and most of the basil through the gnocchi. Divide the mixture into six ovenproof molds, or place in a baking dish. Top with remaining mozzarella, then cook for 3 minutes or until cheese is melted and browned. Season, spread on the remaining basil and serve with green salad.
